It was a hot and humid Saturday afternoon, I decided to make a quick fix of this easy and refreshing salad…you can also try this at home!!!!
Ingredients
Red beans/black beans (bring to the boil until soft)
Lemon
Raddiochio(purple cabbage)
Baby carrots
Pasta
Tomatoes
Thyme Leaves( or dried)
Garlic(diced)
STEP1: First, boil the pasta until it is cooked. Then melt some buuter in a frying pan. Fry the diced garlic until golden brown, add in the pasta. Stir well.
STEP2: Boil the Red beans for almost 45 minutes or until they turn soft. Set aside.
STEP3: Cook the baby carrots in butter and sugar for about 10 minutes or longer(optional)
STEP4: Chop tomatoes into cubes. Set aside.
STEP5: Mix all the ingredients in a big mixing bowl. Toss until all are well- incorporated. Add in some lemon juice or lemon zest to add a twist of flavour. You can also sprinkle some parmesan cheese powder for more flavour. Voila, here’s your very own Italian pasta salad!!!!
